The Pleasure Nugget


Here is my own invention of a the much loved American favorite, the chocolate chip cookie. I used whole wheat flour and oatmeal so you can call these cookies, "healthy".  I love a chewy and crunchy cookie and that is what you will find as you bite into this pleasure nugget! It is so good you can have one for a breakfast on the run.




Chocolate Oatmeal Pecan Cookies


1 cup of butter (softened)
1 3/4 packed brown sugar
1 Tbsp vanilla
1 Tbsp corn syrup
3 cups oatmeal (blended)
1 cup oatmeal
1 tsp salt
1 tsp soda
1/2 tsp baking powder
1 cup whole wheat flour
1 bag of chocolate chips
1 square of chocolate, grated
1 cup chopped pecans
Blend butter, add brown sugar and vanilla cream well, add eggs, mix until fluffyish. Grind 3 cups of oatmeal in food processor or blender till well ground add salt, baking soda and baking powder whirl around till well mixed. Blend in ground oatmeal mixture, whole oatmeal and wholewheat flour. Stir in chocolate chips and ground chocolate. Make into 1 1/2 inch balls. Bake 325F for 10-12 minutes on parchment. Enjoy! Remember to use your liberties with nuts, other dried fruits and or kind of chips. I believe in personalizing according to the needs of the moment and the opportunities that present its'self.
